Mini Pancake Bites Breakfast Recipe

Easy breakfast idea for busy mornings with kids! These freezer-friendly protein-packed Mini Pancake Bites can be made as easy as 3 months ahead of time and frozen for easy meal prepping breakfasts that the whole family will love!

Mini Pancake Bites - Protein Packed Breakfast Idea

Yield: 24 mini pancake bites

These delicious mini pancake bites are packed with protein, and easy to make in jsut 15 minutes. They are also freezer-friendly, and can even make a great addition to your child's school lunchbox.

Ingredients

  • 3 cups pancake mix
  • 2 medium sized eggs
  • 1.5 cups milk (I'm using whole milk)
  • 1/4 cup protein powder
  • desired toppings (mini chocolate chips, sprinkles, fruit, nuts, crumbled sausage or bacon, etc.
  • maple syrup for dipping

Instructions

  1. In a medium mixing bowl, combine pancake mix, protein powder, eggs, and milk. Mix until combined.
  2. Spoon into mini pancake pans, filling each cup about halfway full.
  3. Add desired toppings. If planning to freeze, you can use a toothpick to sirl the ingredients into each cup (especially helpful for mini chocolate chips!)
  4. Bake for 12-15 minutes at 350 degrees Fahrenheit.
  5. Carefully remove from oven when tops are golden brown and toothpick comes out clean when inserted into center.
  6. Serve with maple syrup!

Notes

To freeze your mini pancake bites, allow them to cool down completely, and place in a gallon-size freezer bag. Freeze for up to 3 months.

To reheat, place pancake bites onto a microwave-safe plate and heat on HIGH in 30-second increments until hot. Serve with maple syrup.
